Who doesn't love a big burrito or a crunchy taco 😍 But when you think of Mexican food - you may not necessarily think healthy.. Well here is a delish vegan mexican recipe, that is friendly to waistband as well as a fiesta in your mouth! INGREDIENTS: 1 cup uncooked cous cous 1 can black beans 6 large stewed tomatoes OR 2 cans crushed tomatoes 2 cobs of fresh corn OR 1 can corn kernels 1/2 red onion, finely diced 1/2 teaspoon cayenne pepper 1/2 teaspoon paprika 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon of salt NOTE: If you don't have all these spices, the premade mexican seasoning sachet works just as well, though be sure to check the ingredients & nutritional information on the back of the packet as they can be quite high in sodium. STEP ONE: First up, is cooking the cous cous! This literally could not be any simpler. Pour your cup of cous cous into a bowl and add 2 cups of boiling water. Cover the bowl with a tea towel and leave to sit for approx. 5 - 10mins. Once all the liquid has been absorbed, give the cous cous a quick stor with a fork - it should be super light & fluffy! STEP TWO: Pour all ingredients into a large pot & heat on the stove top. Once it's bubbling, add in the cooked cous cous and stir through until a nice thick consistency. STEP THREE: Serve! I have served mine on a bed of spinach leaves with a scoop of homemade guac but the best part about this recipe is that it can be used for any type of mexican meal! Wrap it in a tortilla with salad for a burrito, stuff it in hard cases for a taco, scoop it on top of corn chips & sprinkle with cheese for nachos - the possibilities are endless!
