No doubt if you are reading this, you know someone who sticks to a raw, vegan diet. You may not understand how, you may not understand why but i'm here to shed some light on just what a raw diet is.
It has been proven that heating foods above 60 degrees Celsius destroys properties and reduces nutrients within the plant life. It has been said that a raw vegan foods covers all nutrients, vitamins and minerals needed for a well rounded diet. Having said that, sticking to a diet in which food can only be heated & not cooked can make sweet treats a little difficult to include. Carrot cake is a simple way to include fruits, vegetables and healthy fats! And as a moist cake, it lends itself perfectly to a raw desert. This recipe is vegan, raw, simple & DELICIOUS! CAKE; 2 x carrots 2 x cups almond meal 1 cup dates 1/2 cup sultanas/raisins 1/2 cup pecans 1/2 cup dried coconut 1 tsp cinnamon 1 tsp nutmeg Place dates in a blender & add a little water to blend until smooth. Peel & grate carrots into a bowl then add all other ingredients. Mix until sticky, then press into pan. ICING; 2 x cups almond meal 3 tbsp lemon juice 1/3 cup coconut oil maple syrup to taste Place cake in the freezer whilst icing is being mixed. Add all ingredients to bowl & stir until smooth. Once the cake is chilled, spread the icing evenly & decorate with nuts, coconut, seeds & fruits. Happy Non-Cooking! XO Holly
