Ah Australia Day! The day when our country is celebrated through slightly burnt sausages slapped in a measly piece of bread, plentiful amounts of lukewarm, hoppy beer lovingly named Bush Chooks, sunburn & 100 of the "best" songs counted down by a mediocre radio station. But we wouldn't have it any other way! I decided this year to throw a lunch BBQ for friends & family so, naturally, I started researching Aussie foods. When diving into Australian cuisine, there is little healthy food linked to us. There are pavlova's, a crunchy mix of egg whites & sugar, usually topped with huge amounts of cream and the occasional berry. Delicious? Yes. Healthy? Not so much. Or then there are meat pies, all the most disgusting leftover parts of the animal, minced up and slathered in a thick amount of gravy & usually defrosted just before serving causing them to be scalding hot or still frozen in the middle. Not at my BBQ thanks... Eventually I landed on lamingtons, squares of soft sponge cake, rolled in chocolate & coconut, sometimes with a smear of jam or cream between them. Now these, I could work with. What better way to celebrate Australia day than with a healthy version of a lamington? Especially one that's: 😍 1. Vegetarian 2. Healthy 3. Delicious RECIPE: Protein Ball Mixture: 1/2 cup almond meal 1/2 cup desiccated coconut 1/2 cup Vanilla Protein Powder (I used Herbalife Select F1) 3 tblsp coconut oil 3 tblsp maple syrup Inside: 2 tblsp of your choice of jam Outside Coating: 3 tblsp Chocolate Protein Powder (I used Herbalife Dutch Chocolate F1) 1/4 cup melted coconut oil OR 100g melted dark chocolate Desiccated coconut to decorate Roll into flat cookie shapes & put the littlest dollop of jam in the centre then roll the ball around it. Dip into Herbie Choc recipe (melted coconut oil & Dutch Choc F1) and sprinkle with coconut. 😍😍😍 A little higher on the calorie side at around 90 calories a pop (depending on the size you make them) but great as a healthy Aussie treat!⬇️⬇️ I adapted this recipe from Kate Bradley's Lamington Bliss Bites - check out her recipe here.
